Looks like some good eating. I like the hanging rack. It gets them up away from dogs, coyotes, and such and allows you to let them "age" for a while when the weather is fit for it. For the last few years, we havent had cold enough temps here in NC through the hunting season to feel safe in letting them hang for more than a day or so. It is good to see others taking part in their natural role in the food chain as opposed to buying shrink-wrapped products that are churned out from domestic stock on high production farms.

A weekend or two after the hunt we skin all of the deer and send them to a butcher. We come out with steaks, roasts, pepperoni, sausage, smoked sausage.
